Carrots are one of the few vegetables that kids naturally like. They are crunchy and they are sweet.
Carrots are also nutritional powerhouses. Carrots are also full beta carotene, which is great for maintaining a healthy immune system.
I find that if kids like something, adding new textures and flavors using that fruit or vegetable is a great way to introduce new flavors. Most of the times I see kids eating either raw baby carrots or steamed carrots. I think this is a great salad to make either for a school lunch or as a veggie side dish during meals. So simple and quick to make. All you need is a grater or a food processor to shred the carrots and the following ingredients:
1 cup shredded carrots
1 tbsp sweetened coconut
1 tbsp crushed walnuts
1) Remove the pit from the dates and cut them into small pieces.
2) Mix all of the above ingredients and serve!
The coconut, dates all enhance the natural sweetness of the carrots. Try it out and let me know how your kids like it.
