We generally don’t eat out but when we do, we are trying out new restaurants and new cuisines. A place that Simone and I often frequent is a macrobiotic restaurant. Macrobiotic diet emphasizes locally grown grains, vegetables and seaweed and the food is minimally processed. This restaurant makes this incredible version of tofu chocolate mousse. So here is a chocolate mousse recipe inspired from the Tofu Chocolate Mousse Simone and I love to eat:
Ingredients: (makes 1 cup)
1 cup soft silken tofu
1 tablespoon unsweetened cocoa powder
2.5 teaspoon maple syrup.
3 pistachios cut into small pieces (optional)
5 pieces of shredded coconuts (optional)
1) Blend the tofu, cocoa powder and maple syrup in a blender. Add more maple syrup if you want it to be sweeter.
2) Chill in the refrigerator for an hour or if you tofu in your fridge then serve right away.
3) Garnish with pistachios and coconut. Alternatively, you can use walnut pieces and corn flakes to garnish.
This is a rich dairy free protein packed dessert. Tofu is good for the kids. It is a great source of iron and calcium. The whole family will love it!
