Cilantro Lemongrass Chicken

In my last post I had written about how I find the Gourmet Garden herb tubes very convenient and that some of you may find using them will actually speed up getting dinner on the table. Isn’t getting dinner on the table every evening one of the hardest things to do?  I think dinner is one of the most stressful meals of the day,  you are trying to decompress after a long day, you want to spend time with the kids and there are so many things around the home that need your attention too. I  find that in order to have a healthy dinner on the table I either need to have cooked it in the morning before I head to work or have thought it through mentally before entering the kitchen  so when I am in the kitchen I am a woman on a mission. I always try to have a cooked meal within 20 mins on the table. This chicken dish made it to the dinning table in about 10 mins once I took the chicken out from the refrigerator. It was perfect over brown rice cooked cooked in chicken broth and tossed with slivered almonds.

Cilantro Lemongrass Chicken
  • 1 medium onion diced
  • 1 tbsp cooking oil
  • 1.5 lbs boneless chicken
  • tsp Gourmet Garden Lemon Grass
  • 2 tsp Gourmet Garden Cilantro paste
  • 1 tsp Gourmet Garden Garlic
  • 1 tsp salt
  1. Cut the chicken into small chunks.
  2. Heat your skillet or wok over high heat. When it’s hot add the cooking oil.
  3. Toss in the onions and cook till they are translucent. This should take about 2 mins.
  4. Toss in the chicken chunks, lemon grass, cilantro, garlic and salt and cook till the chicken is cooked. This should take about 5 mins.
  5. Serve over cooked rice.
