Coconut Strawberry Milk Shake

As it heats up outside, I am looking for beverages I can give to 3 y.o. Simone to stay hydrated.  We don’t drink a lot of juice at home. Juice is a treat in our home used for either making frozen ice pops (zokus) or on weekends.  Majority of the times we drink  plain water, milk, sparkling water, and flavored water.  I have been thinking of different ways to flavor milk and I love this island inspired milk shake.  The flavors of strawberry and coconut are so refreshing, delicious and cooling.  Strawberries are in season at the moment in Southern California and they are very sweet and delicious.

Ingredients:

4 oz milk (I used 2% but you can use whole, fat free, soy or 1%)

2 strawberries

1 tsp sweetener (I used honey)

1 tbsp shredded coconut (used for baking) or coconut chips

Instructions:

1)      Puree all the ingredients in a blender and serve.

The verdict: This was so delicious that I had to make 2 other batches for everyone at home.  Simone loves this shake.
