During our nightly snuggle and talk time, my 4.5 year old daughter asked me how I made the baked tofu that the kids at her preschool had eaten earlier in the day.
Me: I mixed some honey, sesame oil and soy sauce together and baked it.
Her response: You know why I asked you for this recipe?
Me: No.. why?
Her response: I asked you for this recipe so that when I am older, I can make this dish for you.
Ah. Music to my ears.
Ingredients (about 5-6 servings):
1 14oz Organic Firm Tofu
2 tbsp honey
1 tsp soy sauce
2 tsp sesame oil
1) Drain and rinse the block of tofu. Wash and flip the plastic container in which the tofu came in upside down and place it on a plate. Place the tofu block on top of it packaging and put a paper towel of top of the tofu block. Place a plate on top of the tofu block and weight it down with something heavy (heavy pot, or potatoes etc), to press out some of the excess liquid. Let the tofu drain for 15 minutes.
2) Cut the tofu into cubes, or strips or anything you feel like.
3) Put the cut tofu in the baking dish and add all the ingredients above. Mix the marinade and tofu thoroughly to evenly coat the tofu.
4) Bake in the oven for 30 minutes at 400 F.
NOTE: The longer you let the tofu sit in the marinade, the deeper the flavor will be. I did the marination at night so I could make the snack for the kids in the morning before I left for work.
Serve the baked tofu with broccoli for an added nutrition boost or as is. This also makes great finger food.
