In my final stretch of my second pregnancy, managing gestational diabetes is getting harder and harder. As a result I am on insulin now. I take 2 shots a day to give me full coverage. The interesting thing is as I have more insulin in me, the hungrier I get, as my body is that much more efficient in managing my diabetes. I am on 17 servings of protein a day. I still haven’t figured out how many chickens that is. I shouldn’t complain though, research has shown that eating lots of protein during pregnancy can make your child more laid back.
Regardless of the restrictions of the gestational diabetes diet, my favorite snack of the day is the afternoon snack, where I chop up some fruits, generally strawberries or other fruits high in oxidants, have some cottage cheese, and top off with almonds. I also eat the Wasi crackers on the side. At 20 calories a cracker, this is a yummy cracker that my daugther also loves to eat everyday.
