I could very easily be a full time vegetarian if it weren’t for Bacon and Seafood. I have an extremely difficult time staying away from these two. So for now, the family alternates between full on vegetarian meals and non vegetarian meals. I find this to be extremely effective in stretching the food budget every month in addition to the health benefits.
Farmer John is introducing the new Mild Premium Jalapeno Bacon and they asked me if I would like to test the product and develop a recipe. I accepted and here’s what came out it.
The strips didn’t look any different from the normal bacon strips. I decided to come up with a breakfast recipe using the bacon strips. I took about 5 strips of bacon and cut them into small pieces. Although crispy bacon is truly amazing, I wanted to make keep the bacon “soft”.

With the same great flavor as the Farmer John popular classic bacon, the new mild jalapeno bacon offers subtle spice and flavor that can be added to enhance any mealtime – breakfast, lunch, snack or dinner.
- 5 Farmer John Jalapeno Bacon Strips
- 3 eggs
- 1 large tomato diced
- Salt to taste
- Cut the bacon strips into small pieces.
- Place them in a frying pan on medium heat and cook the bacon strips for about 3 minutes. Drain the fat.
- Add the cracked eggs and the tomatoes to the bacon.
- Cook till the eggs are cooked. Approximately 2 minutes.
- Add salt to taste. Serve with warm bread.
