Today’s post is going to be short as I have gone on 4 hours of sleep in the last 36 hours. Today’s post is one of my family’s favorite. It a perfect early solid food for infants and a great side dish. I love this recipe because it is simple and tastes yummy. You also get to introduce your infant to cinnamon and crème fraiche (optional).
2 sweet potatoes
1 tbsp. butter
½ tbsp. cinnamon powder
Salt to taste (optional, if making for infants under 1 then avoid salt)
1 tbsp. crème fraiche (optional if you want to take it up a notch or alternatively you can use sour cream)
1) Cut the sweet potatoes into chunks and add to boiling water in a pot and cook till they are done. You can also either microwave them or use a steamer to cook the sweet potatoes.
2) Once cooked remove the skin and mash the potatoes either using a hand blender or a fork. You get a different texture depending on what you do, so if your child is just starting on solids then puree if, but if you child has been on solids for some time then mash the sweet potatoes using a fork.
3) Add the cinnamon powder, butter and top of with sour cream or crème fraiche and serve.
