Peanut Butter Banana Frozen Pop (Zoku)

I like peanut butter and banana sandwiches/Panini’s and with the temperature soaring I have been thinking about new frozen pop zoku recipes for this summer. I have about 20 new zoku recipe ideas that I will be creating over the next few weeks (so do come back!). This simple zoku has been inspired by the peanut butter and banana sandwiches that we love in our home.

I only got one bite of this Zoku and my daughter pounced on it as soon as I took it out of the machine. Hence the only picture I was able to get of the Zoku was the one of her eating. Oh well – don’t you enjoy it when kids love to eat the food you make?

Here’s the recipe (makes 1 zoku):

1 tsp unsweetened peanut butter

2 tsp yogurt (I used whole milk but you can use 1%, fat free, greek etc..(

1.5  tsp honey ( or any sweetener of your choice)

2 tsp mashed bananas

1)      Hand mix all the above ingredients.

2)      The resulting ingredient mixture is very thick so I diluted it a little by adding water. I added the water to make the total mixture be 2 oz as 2oz makes 1 Zoku.

3)      Add the mixture to Zoku maker and wait till frozen (approximately 5 minutes).

NOTE: These frozen pop recipes will also work without the Zoku Maker, just add the mixture to your pop mold and store in the freezer till frozen.

    Oooh, this looks good. I’ve got a batch freezing in my Zoku right now – mostly for my partner. I doubled the recipe and since I’ve got some chocolate fudge mix in the fridge already, I might make a second and third batch that’s half peanut banana and half chocolate.

    When I say doubled I mean tripled and then doubled! Enough to make 6 pops.
