Pumpkin Pancakes

Everywhere you turn around now a days you see pumpkins! Pumpkin pies, Pumpkin Lattes,Pumpkin soup, Pumpkin cupcakes – you  name it, so pumpkin has been on my mind lately. When I was thinking of what to make for breakfast — all I  could think was PUMPKIN! PUMPKIN!.  So here’s a quick recipe to make the perfect tasting pumpkin pancakes that the whole family will love.

I was looking for the quickest way to get some yummy pancakes on the table so I used the multi grain pancake mix from Trader Joe’s and add it some pumpkin pie puree. The pumpkin pie puree already had cloves, nutmeg, cinnamon etc so I didn’t need to add any of these spices. I modified the pancake batter instructions in order to include the pumpkin puree. Even though my recipe calls for using Trader Joe’s mix, you can actually use another other pancake mix and adjust the ingredients to your taste.

Here’s the recipe (makes 10 medium sized pancakes):

13/4 cups Trader Joe’s multi grain mix,

3/4 cup water

1/2 pumpkin pie puree

Mix the above ingredients to prepare batter. Spray or add butter to a medium fry pan set on medium heat. Spread the batter on the pan to make a shape or just simply spread it to make a round pancake. Cook pancake till it is cooked on 1 side, flip over and continue to cook the other side. Reduce heat if needed to cook pancakes.

Remove from pan and serve with syrup or a fruit compote. I served mine with peanut butter and whipped cream as my 3 year old is in love with peanut butter now a days.

NOTE: If you are following the instructions on the back of the multi grain pancake mix then you will need an egg also to prepare the batter. In this case adjust the quantity of the puree based on the batter consistency.
