Recent addition to our breakfast repertoire has been quinoa porridge. Infact I make a little extra at the beginning of the week and then use it during the week to make banana/avocado quinoa puree, quinoa crisp, toss it in salads and of course quinoa porridge.
Quinoa is a gluten free amino acid rich protein and it contains all 9 essential amino acids. It is also close to nature as it contains amino acids, enzymes, vitamins and minerals, fiber, antioxidant and phytonutrients. Did I hear Nutritional Powerhouse? Yes it is one! You should try it if you haven’t already. You can get it at any grocery store now and Costco also carries it at a reasonable price.
The main reason kids will love quinoa is because of the slightly crunchy texture it has. Kids love CRUNCHY! Finally the beauty of making porridge is everyone in the family can add their own choice of milk, choice of toppings, level of sweetness and type of fruit. A fun activity that the kids can get involved in also.
So this is not a recipe but a list of ingredients I use to make the porridge for the family. Use it and adapt it to your own family’s needs.
1 cup white quinoa
2 cups water
1 tsp butter
Sweetener add to taste
Chopped nuts of your choice
Cut fruits of your choice
Milk of your choice
In a small pot add butter, quinoa and water and bring to a boil. Reduce heat, cover and simmer for 15 minutes till most of the water has been absorbed. Remove from stove and serve in individual serving bowls and have everyone add their milk, sweetener, nuts and fruits.
