Recipe: Kiwi Citrus Lemongrass Zoku

I realized earlier today that it had been a week since we made our last Zoku. I was really for my Zoku fix. I wanted to make something juicy, citrusy,  and refreshing.  So I decided to use kiwi and citrus lemongrass juice (Naked Juice) to make a Zoku.  The result was delicious!  I still have the taste lingering in my mouth and it feels great.  I added a little sweetener to this Zoku to remove the tartness of the kiwi but you can make it without the sweetener if you prefer.  The citrus lemongrass juice had the right amount of citrus and lemongrass to go with the kiwi.

Ingredients (makes 2 Zokus):

1 kiwi

½ tsp Agave Nectar (use any sweetener you like)

2 oz Citrus Lemongrass juice

Instructions:

1)      Peel the kiwi.

2)      Add the kiwi, sweetener and orange juice and blend for 5-10 seconds.

3)      Pour the liquid mixture into the Zoku till the fill line.

4)      Wait till it freezes.

5)      Enjoy!

The Verdict: Let’s just say I only got 2 bites of my Zoku.  My daughter ate, actually devoured the whole thing. She took it away from me.  She said, it looked very beautiful and that her Zoku reminded her of the “kiwi cups” we had a few days ago.
