This is the season for Persimmons and they are only available October through Early February. When they are they provide us with important nutrients such as beta-carotene, Vitamin C and potassium. Majority of the Persimmons grown in the US are grown in California.
Here’s a quick snack recipe for children:
Juice of half medium sized lemon
1) Cut up 2 persimmons
2) Add pomegranate seeds to the persimmons
3) Add the lemon juice
This combination is just so simple and yummy that your kids will keep eating. If you want to make a salad out of it for adults you could toss in Mint leaves and nuts. This is very simple and easy to make.
A surprise benefit that I wasn’t expecting is that the pomegranate seeds in the salad were helping my daughter with her fine motor skills as she was using her fingers to eat the seeds.
