Recipe: Strawberry Yogurt Zoku Pop Maker Recipe

Today was my first day of making Zoku recipes. It took me less than 10 minutes to make the 3 pops.
I wanted to make something tangy and tasty, so I made up my own recipe. Here’s what I did:
Strawberry Frozen Yogurt with pistachios and lime juice
Ingredients: (Makes 3 pops)
One 7oz container of Greek Yogurt
½ teaspoon lime juice
2 teaspoon Agave Nectar (more if you want the popsicle to be sweeter)
2 big whole strawberries, hulled, de-stemmed and chopped.
2 oz 2% milk (optional)
8-10 pistachios, ground into small pieces.
Instructions:
1) Blend the yogurt, lime juice, strawberries and milk. Adjust the milk to achieve a consistency like cold syrup. It’s OK if the strawberries are tiny bites. Remember, Zoku works best with liquid.
2) Add Agave nectar to taste. Make sure it is a bit sweeter than you normally prefer, because as the yogurt freezes some of the sweetness disappears. You can also substitute sugar syrup.
3) Add the ground pistachios to the yogurt mixture.
Now use the mixture and follow the instructions that come with Zoku.
The recipe makes 3 pops, but I lost one to experimentation and ended up with two.
The verdict: Hubby really enjoyed it. He gobbled it down. The kid has a cold so only had a bite. I thought it was a little too yogurt-y for me. I think I was looking for something creamier.

My kids love these pops. Even my eighteen Month old loves to make them, and they soothe her teething pain. She’s happy with just orange juice or apple juice, but we made chocolate ones using organic instant chocolate pudding and they were delicious. Very creamy and choclately! YUM!
I must say.. strawberries go great with anything. Great stuff!
These were very good. I bought two containers of yogurt and got enough for 4 pops. This was the first batch of pops I made. Off to a great yesterday.
