I think we need to go to an island as all the food items I think about lately are coconut, papayas, pineapple, guavas, passion fruit and bananas. Till we visit an island I think we are going to pretend we are on an island by drinking and eating island inspired food and wearing our leis at home.
I like Pineapple juice but it is not very common in the US. Most places serve orange, apple or grapefruit juice. You can actually use pineapple juice as a marinade and a meat tenderizer since it contains an enzyme that breaks down protein. Personally I like my pineapple grilled but this recipe is an incredible frozen pop.
Ingredients (makes 2 Zokus):
4 oz Pineapple Juice. I used the Ceres brand that is widely available in the US.
2 tsp heaped sweetened coconut flakes that you normally find in the baking aisle of grocery stores.
Hand mix the juice and the coconut and fill the Zoku with the mixture.
Tip:If you put the Zoku stick in and then pour the mixture, the Zoku will not work as the coconut pieces will not go in easily and you will make a mess.The way I get around this is by removing the stick out and pouring the mixture into the machine and putting the stick back in immediately.
The Verdict: My 3 year old loved it. This Zoku has a vibrant yellow color, so appropriate for the summer. The combination of pineapple and coconut is divine. Simone couldn’t stop dipping her hands in the pineapple coconut mixture. It’s almost like Pina Colada except for the rum!
