When I made the strawberry frozen yogurt zoku recipe yesterday, I really loved the yogurt mixture that I had put into the Zoku to turn it into a frozen popsicle. The yogurt was thick and creamy, and had the right tartness and sweetness. I decided to make the recipe again today, but ate the mixture without freezing it, for a quick healthy yogurt snack.
3 big strawberries – de-stemmed, hulled, and chopped
1 cup 2% Greek Yogurt (I used Fage)
10 pistachios ground into small pieces
½ teaspoon lime juice
1 ½ teaspoon Agave Nectar
1) Add everything in a bowl and you are ready to eat!
I added in 1 ½ teaspoon of Agave which is approximately 2 ¼ teaspoons of sugar. This is about half the sugar you find in a flavored cup of yogurt.
When I visited Japan a few years ago, I became a fan of the fruit salad sandwiches they have over there. In the past I have made these sandwiches with cool whip, but this yogurt would make a great filling for a fruit salad sandwich.
