Seasoned Peanuts

We are a peanut family. My father develops new varieties of peanuts for a living that are then given to countries, organizations and farmers to grow in their local markets. The one variety that I am really proud of is the one that has Vitamin A in it. Vitamin A is needed for preventing blindness due to malnutrition but you need fat to dissolve it. Hence Vitamin A infused peanuts solve this problem for children and adults in the developing countries. So proud of my dad! As such peanuts hold a very revered spot in our home and we always have some of the best peanuts at home. Peanuts and nuts in general are great for the kids as long as they are not allergic to them. Peanuts are packed with Vitamin E, folates, protein and amino acids. They are high in fat but it is the good fat. If you are trying to help your child gain weight then give them peanuts.
You can boil or fry peanuts. This recipes calls for frying peanuts and seasoning them and is a tasty kid snack and a party snack. You can reduce the amount of oil used for frying the peanuts if you like but sometimes I like to indulge. So here it is:
2 cups peanuts with their skins on
2 cups oil for frying
Salt to taste
Instructions:
1) Heat the oil in a deep pan for frying.
2) Add the peanuts and fry for 30-45 seconds till the peanuts release an aroma.
3) Remove from the pot and place the peanuts on paper towel to clot excess oil.
4) Season with salt.
5) Eat, Eat, and Eat!
The Verdict: This has become Simone’s new snack. She has been carrying her peanut box everywhere and refuses to let me have some. When they are made fresh these peanut are very addictive. Plus the fact that you can control the amount of salt and other seasoning you want to add make it even more exciting.
