Spicy Tapenade

My little one loves olives. She will eat olives all day long if she had her way. Olives are a great source of monounsaturated fat, iron, Vitamin E, copper, and dietary fiber. We always have olives in our home. I often pack olives with rice or plain olives in her lunch box.
So when I heard that Lindsay Olives is having a recipe contest using olives, I decided to come up with this quick spicy tapenade recipe as my entry. This recipe will make a great appetizer for a party ( Don’t think kids will gravitate to this since I have added crushed red peppers to it).
This spicy tapenade took all of 5 minutes to put together. Enjoy!
Recipe Details:
1 bowl medium black pitted olives
1 tbsp olive oil
1 tsp crushed red pepper flakes.
½ tsp coriander powder
½ tsp curry powder
1 garlic clove diced
1) Place a small frying pan on medium heat. Add the olive oil, crushed pepper, coriander powder, curry powder and garlic and satuee for about 30-45 seconds. The spices will release an aroma.
2) Add the olives and coat them with the spice mixture and sauté for 2-3 minutes.
3) Remove from heat and place the olives in a blender and blend till the olives are coarse.
Serve with warm bread.
