Yes these Whole Wheat Creamed Corn pancakes taste as good as they look. Top off with Greek yogurt or sour cream and you have a nice breakfast, light lunch or a great snack alternative. They are small enough that the kids can pick them up and go. When my friend introduced me to this a few days ago, I was intrigued because she has some of the best homemade healthy recipes for children that I know off. She said it was a family favorite and her kids loved it. I knew I had to try it out. She was right! They are delicious and take very little time to prepare.
So here’s how they were made:
1 400g (14 oz) tin of Creamed Corn or you can make homemade Creamed Corn like I did
5 Tbs Whole Wheat flour (yes, you can use other flours like chickpea flour, coconut flour, all purpose flour etc.)
1/2 tsp baking soda
Add ingredients to bowl and mix vigorously. Giving the mixture an extra hard beating will give you fluffier pancakes.
Heat a frying pan on medium heat, spray some olive oil on it. Make patties from the corn mixture and put them on the pan and fry them till they are brown on both sides.
Serve with greek yogurt, sour cream.
1) You can use any flour you want for the pancake. All purpose, chickpeas flour etc.
2) You can fry them, bake them, shallow fry them etc.
